An online guest lecture held on 20/11/2025 at Don Bosco Skill Mission offered a thought-provoking and enriching learning experience for trainees pursuing the Guest Service Associate – Food and Beverage job role. The session was led by Mr. Augustine James Dhamaraj, HR Manager at Ideal Resort, Mahabalipuram, Chennai, whose extensive hands-on experience in the hospitality sector helped students connect industry expectations with real workplace scenarios.

Mr. Augustine opened the session by emphasizing the high standards of grooming expected in the hospitality industry. He explained that a well-maintained professional appearance immediately builds trust, reflects respect for the workplace and enhances the overall guest experience. He then encouraged students to cultivate a positive mindset, noting that a constructive attitude not only influences personal performance but also supports teamwork, smooth service flow and guest satisfaction.

The lecture offered valuable insights into workplace behaviour by clearly distinguishing between good professional conduct and practices that can hinder service excellence. Mr. Augustine highlighted the importance of punctuality, responsibility and respect while reminding students that unprofessional behaviour can compromise team efficiency and the image of the establishment.

The trainees were introduced to practical techniques for handling guests with courtesy and confidence. Mr. Augustine stressed the importance of polite communication, patient listening and offering prompt and reliable assistance. Mr. Augustine encouraged trainees to understand menu items thoroughly, including their ingredients, preparation styles and flavours, so they can answer guest queries with assurance and professionalism. He also took the learners through the significance of identifying various types of cutlery, their uses and the need for precise table settings to enhance dining standards.

Participants gained exposure to different types of table arrangements and glassware setups, including formal and informal dining layouts. Mr. Augustine stressed that mastery of these elements contributes greatly to service efficiency and elevates professionalism on the floor. He also reminded students that during busy service hours, attention and teamwork are crucial, advising them to avoid mobile phone usage to maintain focus and service quality.

The session encouraged trainees to make good use of quieter periods by observing senior staff, refining their service techniques and expanding product knowledge. Mr. Augustine reinforced that a passion for learning and commitment to growth form the foundation of a successful career in hospitality.

Upselling was another practical skill addressed during the lecture. Trainees were guided on how to recommend dishes and upgrades in a manner that supports both guest satisfaction and business revenue without being intrusive.
